The Bikini Cocktail

Makes enough for 10 servings

To make the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Premix (yields 850ml, to serve 10)

400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

For the Cordial: Put all the components in a pan, heat until it reaches a simmer, mixing to dissolve. Then, take off the burner and leave to reach room temperature completely. Decant into an sterilised bottle, cap it and refrigerate it in the fridge, it will last for about a month.

To make Batch Mix: Combine all the spirits and syrup into a big jug, allow it to infuse for one hour, then filter it , ideally through muslin, so it's perfectly clear.

To serve: Measure 85ml of your premix to a stirring glass filled with ice, and stir gently for about 60 seconds to chill. Pour to a chilled martini glass or similar, garnish with a few cranberries and complete it by giving it a brief mist of the essential oil above the glass.
